Gluten-Free Chocolate Energy Balls

These gluten-free choc-oat energy balls are packed with protein and slow-burning carbs to power your workouts, or get you through an afternoon energy slump.
Inspired to create a healthier version of traditional rum balls, these energy balls are so easy to throw together, and can be stored in the fridge for several days, but you’ll likely want to gobble them up sooner!
Ingredients:
1 cup (125g) gluten-free quick oats
15g almond or hazelnut meal
6g maca powder
10g whey protein powder
2 tbsp (30g) coconut oil
2 tbsp (14g) coconut sugar
60ml oat or hazelnut milk
2 tbsp (16g) cacao powder
Pinch of salt
1 tbsp Kahlua (optional)
1 large Medjool date, diced
1 tsp vanilla essence
10g dark chocolate chips
6 Brazil nuts (15g), finely chopped
10g desiccated coconut
Instructions:
Combine oats, almond/hazelnut meal, Maca powder and whey protein powder in a large bowl.
Combine oil, coconut sugar, hazelnut milk, cacao powder, salt, Kahlua and the chopped date in a small saucepan over medium heat. Bring to a simmer and thicken for a minute.
Remove saucepan from heat, add vanilla essence and pour over the dry oat mixture. Mix well to combine wet and dry ingredients.
Sprinkle in the chocolate chips and Brazil nuts and fold into the mixture.
Cover the bowl and chill in the fridge for 40 minutes.
Scoop mixture into balls and roll in the shredded coconut.
Chill again in the fridge to set properly. Keep stored in the fridge for a firm texture.
Makes 10-12 balls.
