Choc-Berry Oatmeal Porridge
Looking for a hearty breakfast to power you through your day?
Want to transform your average oatmeal from bland and boring to mind-blowing?
I was never a fan of porridge growing up, but this version is so full of flavour that I’m now a porridge convert!
Not only will it keep you satisfied for hours, due to its slow-releasing energy, this recipe is also full of antioxidants, which are shown to reduce the risk of certain diseases.
Serves: 1
Ingredients:
60g gluten-free oats (I like to mix 30g quick oats with 30g rolled oats for texture)
5g cocoa powder
2g maca powder
100ml nut milk (I prefer hazelnut)
60ml water
1tsp honey or coconut sugar
25g frozen raspberries
50g frozen blueberries
2 tsp dark chocolate chips
1 medium banana
Fresh strawberries to garnish (optional)
Instructions:
Combine the oats, cocoa powder, maca powder, nut milk, water and honey/sugar in a small pot or shallow non-stick frypan over medium heat.
Stir in the frozen berries and cook until the berries thaw, the oats soften and the liquid thickens and reduces. Stir occasionally.
Chop up a banana in a medium-sized bowl and sprinkle 1 tsp of dark chocolate chips over it.
Once the porridge is hot and thickened to your liking, pour it over the banana.
Garnish with a handful of fresh, chopped strawberries and the remaining chocolate chips and watch them melt into gooey deliciousness…
