Gluten-Free Banana Bread

Is there anything more cosy than a slice of warm banana bread fresh out of the oven on a cold winter’s day?  

This delicious and healthy gluten-free banana bread recipe is guaranteed to satisfy your sweet tooth! 

Banana bread is so easy to make and is a great way to use up overripe bananas, that would otherwise be destined for the trash can. 

It’s such a versatile recipe - once you have made the basic batter, feel free to get creative with whatever ingredients you have in your pantry! Mix in your favourite nuts, chocolate chips or a protein powder such as hemp or whey protein.

A delicious and healthy gluten-free banana bread recipe for your Sunday brunch.

Ingredients:

Wet ingredients:

  • 3 large ripe bananas

  • 3 eggs

  • 1/4 cup avocado oil or 1/3 cup coconut oil (melted)

  • 1 tbsp vanilla essence

Dry ingredients:

  • 1/2 cup coconut flour (can substitute for 1/4 cup coconut flour + 1/4 cup organic whey protein powder)

  • 1 tbsp hemp protein (optional)

  • 1 tbsp maca powder (optional)

  • 1 tbsp coconut sugar

  • 2 teaspoons baking powder

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 35g chopped Brazil nuts or pecans

  • 20g dark chocolate chips or cacao nibs (recommended)

Instructions:

Preheat your oven to 170 degrees Celsius. Line a bread baking dish with baking paper.
Mash bananas in a large bowl and mix in wet ingredients.
Add dry ingredients to batter (including most of the chocolate chips) and combine well.
Pour into the baking dish, spread evenly and sprinkle the remaining chocolate chips on top.
Bake at 170 degrees for 55 mins or until a knife/skewer comes out clean.
Remove banana bread from oven and cool for 10 minutes before slicing.
Enjoy with a cup of tea or a hot chocolate!
