Gluten-Free Pancakes
Who doesn’t love to make pancakes for brunch on the weekend? This super simple, gluten-free pancake recipe only uses six ingredients and makes moist, sweet pancakes, without any added sugar.
This basic recipe can be dressed up by adding berries or choc chips into the mixture, and of course you can serve it with a variety of toppings for the most delightful weekend treat!
This recipe serves one person, so simply multiply the measurements by the number of people you are cooking for.

Serves: 1 (three small pancakes)
Ingredients:
1 medium ripe banana
1 egg
1 tsp coconut oil
5ml vanilla essence
1 tsp Maca powder
10g coconut flour
Dark chocolate chips (optional)
Instructions:
Mash the banana in a medium-sized bowl with a fork.
Whisk in the egg and vanilla essence.
Sift coconut flour and Maca powder into the bowl and combine with a small whisk.
Heat the coconut oil on a non-stick pan on medium heat.
Scoop the mixture onto the pan to make three small pancakes.
Optional step: sprinkle a few chocolate chips onto each pancake.
Once the top of the pancakes are mostly sealed, flip pancakes over and brown.
Serve with your choice of fresh berries, yoghurt, nut butter, gelato, maple syrup or berry coulis.
